Yield: Makes 4 servings
Ingredients:
1 pound extra-firm tofu, sliced into 1/2 inch slices, about 12 slices
Cooking spray or olive oil
1-tablespoon olive oil
2 tablespoons tamari or soy sauce
1/4 teaspoon ground black pepper
1/2cup unbleached flour
1/4 teaspoon sea salt
1/8 teaspoon ground black pepper
1/4 teaspoon paprika
3/4 cup whole grain or other dry bread crumbs
3/4 cup hemp seeds
3/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme
1/2 cup plain soymilk
Additional cooking spray and olive oil
Method:
Preheat the oven to 400°F. Line a cookie or baking sheet with parchment paper and spray with cooking spray or brush with olive oil. Lay tofu slices out on prepared sheet. Drizzle with olive oil and tamari, them sprinkle with black pepper. Bake tofu for 15-20 minutes. Let cool.
Mix the flour, salt, pepper and paprika on a plate. On a separate plate, mix the bread crumbs, hemp seeds, salt, pepper, and thyme. Pour the soymilk into a shallow bowl.
Dredge each tofu slice in flour, then dip in soymilk, and then coat tofu on each side with breadcrumb mixture. Heat a 12-inch nonstick skillet over medium high heat, and coat with cooking spray. Add 1-2 teaspoons of olive oil and when oil is sizzling, add half of the tofu slices. Sear about 1-2 minutes on each side, and repeat with more spray, oil and remaining tofu.
Tofu slices can be made ahead and reheated for 5-10 minutes in a 350°F oven on parchment lined baking sheet.
