Carrot Cake

Yield: Makes one 8x8-inch square or 12 cup cakes

Ingredients:
1 1/2 cups all-purpose unbleached flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
1 3/4 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1 cup sugar
2 tablespoons packed light brown sugar
3/4 cup canola oil
3/4 cup plain soy milk
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoon finely grated orange rind
2 1/4 cups shredded carrots (about 4 large, peeled)
3/4 cup drained crushed or chopped pineapple
1/2 cup shredded unsweetened dry coconut
1/2 cup chopped walnuts or pecans
Cream Cheese Icing
1 cup cream cheese
1/4 cup unsalted butter
2 cups sifted powdered sugar
1/2 teaspoon pure vanilla extract

Method:
Begin making the cake by preheating the oven to 350°F. Grease and flour an 8X8-inch square pan or fill a 12 cup muffin pan w2ith paper liners. Sift flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg into a large bowl.

In a medium bowl, whisk the sugar, oil, soymilk and vanilla until they emulsify. Add liquid ingredients to dry ones with a rubber spatula, stirring enough to blend. Fold in the carrots, pineapple, coconut, and chopped nuts, mixing only until combined.

Transfer batter into prepared pan or cupcake pan. Bake cake for 35-40 minutes or until springy to the touch and a toothpick inserted in the center comes out clean. Bake cupcakes for 20-25 minutes. Cool cake on a wire rack until room temperature.

For the frosting, beat the cream cheese and butter until smooth and creamy in a freestanding heavy-duty mixer or with hand beaters. Beat in the powdered sugar until the mixture is of frosting consistency, beat in vanilla.

Frost the cooled cake.
