Most kids are picky eaters, and the chefs at Moto want to change that... and stat! In this episode, Omar and Ben make chicken soup and other treats that their child guests will (hopefully) eat.
Ingredients:
For Soap:
1 pound boneless chicken thighs, bones removed ? 1 pound
4 grams Transglutaminase (or 3 egg whites)
1 1/2 tablespoons salt
For Spaetzle:
1 cup flour
1 teaspoon salt
1/2 teaspoon ground nutmeg
2 eggs
1/4 cup milk
3 tablespoons butter
For Soap Suds:
2/3 cup honey
2 tablespoons grain mustard
2 cups water
1 tablespoon salt
Juice of 1 lemon
0.5 grams Xanthan gum
1.25 grams Versawhip
Procedure:
For chicken soap:
Chop chicken thighs, add them along with all other ingredients (transglutanimase and salt) to food processor. Grind until a semi-smooth paste.
Spread chicken paste into a greased baking dish to a thickness of about 1 inch.
Bake, covered, at 250 degrees F until an internal temperature of 165 degrees F is reached inside the chicken.
Remove from oven and allow to cool.
Cut into rectangles.
To serve, heat in a hot skillet and baste with butter until chicken is warmed through.
For Spaetzle:
In a large bowl, combine the flour, salt, and nutmeg.
In another mixing bowl, whisk the eggs and milk together.
Make a well in the center of the dry ingredients and pour in the egg-milk mixture.
Gradually draw in the flour from the sides and combine well; the dough should be smooth and thick.
Transfer dough to piping bag, let the dough rest for 10 to 15 minutes.
Bring a large pot of salted water to a boil.
Once boiling, squeeze noodle-length ?worms? into the water, allowing them to cook for 3-4 minutes, or until the spaetzle floats to the top of the pot.
Remove from water.
Melt butter in a skillet and add the cooked spaetzle.
Toss with melted butter and serve.
For Soap Suds:
In a blender, combine all ingredients.
Blend for 2 minutes.
Strain through a fine-mesh strainer.
Transfer to a bowl for a stand mixer and use the whisk to whip the mixture into a thick foam, resembling whipped cream.
Serve alongside chicken ?soap."
Editor's Note: In the show, an edible piece of paper with the word ?soap? printed on it was transferred onto the chicken to more closely resemble a bar of soap. In this case, we have omitted that step. For more fun, you can add food coloring to the chicken, before baking and to the spaetzle dough with the wet ingredients.
