It takes motivation and inspiration to make a lasting change in your life. Eating healthy is one of those lasting changes you never regret. Diet and exercise is key to achieving and maintaining a healthy lifestyle. So what happens when you reach a goal, and don't want to backslide?

Today we'll meet Laura MacLean, who, through lots of hard work and the support of loving friends, lost 130 pounds.

Chef Emeril wants to help fuel her new, healthy lifestyle with a protein rich Lentil Salad topped with Braised Greens and an awesome Vital Force Energy Drink to keep her energy level high.

TIPS

  • Always dress your Lentil or Potato salad while it's warm. The starches are soft and absorb the flavors easier.

  • Drink your fruits and vegetables. Your body won't have to work as hard to break down the fiber and the nutrients can be absorbed quickly into your cells.
