Souffles take practice. But what if you keep on practicing, and perfection escapes you. Your cheese deflates, your desserts are dense.....It seems the oven door has slammed shut on your dreams. Aggie's a flop when it comes to souffles. Her family even knows to bring backup desserts to cover Aggie's promises. But let?s see if we can have Aggie "rise" to the occasion this time by teaching her how to make a delicious Cold Smoked Trout Souffle, a warm and creamy Leek and Feta Souffle with mesclun Salad, and, of course, the ultimate dessert.... Chocolaty Chocolate Souffle with Chocolate Sauce!




TIPS:


  • Whipping egg whites in a copper bowl helps prevent over-beating and results in a more stable mixture.

  • The broad, flat surface of a rubber spatula makes it the best tool for folding you whipped egg whites into your base mixture.

  • Don't over-fold your egg white mixture into your base. Keep the mixture light and airy!
