Meat may be one of America's favorite main dishes, but people still have plenty of questions. Which cut do you use for grilling, which grade makes the best hamburger, or how do I make sure my steak is done? Today we'll meet Valerie King who loves steak but doesn't know which cut to buy, how to cook it or even how to handle it. She'll gain a little meat know how and then see if Chef Emeril's Beef Lettuce Wrap with a Chimichurri Sauce and Baby Bok Choy Stir Fry will serve up a delicious solution to her dilemma.

Chimichurri is a thick herb and vinegar sauce. It's great to use as a marinade, as a condiment for grilled meats or even as a salad dressing.


Bibb Lettuce
Thump the core end of lettuce briskly on the counter and the core will twist out easily.


Salad Spinner
Refrigerate your lettuce in your salad spinner, it makes a great crisper.
