Where?s the beef? Limiting the amount of beef you eat can really help the environment, so Chef Emeril Lagasse enjoys making meatless meals from time to time on Emeril Green.

Emeril shares infinite bits of wisdom on choosing the right fresh ingredients to make New Orleans-style shrimp, fresh barbeque sauce, homemade biscuits with rosemary, and sweet tea?.all while using organic ingredients that are better for the environment and while trying to create as little waste and as much taste as possible.

Emeril considers sweet tea to be a perfect match with this meatless meal, and Emeril Green features a Whole Foods Market tea spooner who helps Emeril find the perfect tea to brew for sweet tea. The final selection for this recipe is Earl Grey (black tea) with a bold flavor, sweet smell and citrus aroma.

Green tip: buy loose tea and use an infuser to prevent throwing away countless tea bags.

Another green tip: recycle tea and coffee grounds in your garden.
