Choosing a vegan diet can have terrific physical and environmental benefits. But what if you're afraid you'll be stuck eating nothing but steamed carrots and broccoli? Bryant grew up eating fatty meats and overcooked vegetables. He wanted to find a way to improve his diet without giving up the flavors that he loves. Bryant will show us his version of Baked BBQ Black-Eyed Peas. Emeril explores Gumbo Z'herbes With Wild Rice. Updating a traditional dish, Shiitakes And Chanterelles With Stone Ground Grits. We add a couple of classics like Sweet Potato Fries with Orange Mustard Dipping Sauce and Corn Macque Choux.

Emeril's Tips

Vegans and Vitamin B12
Many vegan diets are deficient in vitamin B12, responsible for brain function. To provide adequate levels of B12, try:

  • Miso and Tempeh

  • Root Vegetables

  • Fortified staples such as breakfast cereals, meat substitutes and some soy milks
