No meal is complete without side dishes, but it's easy to get in a rut and serve the same things over and over again. My friend Cecilia is a busy mother of six who barely has the time to get dinner on the table, let alone prepare jazzy sides. She has trouble stirring up the creative energy involved to come up with accompaniments to her main dishes so tonight, I'm giving her a hand. We're making not one, not two, but ten side dishes! There's something for everyone on this menu!
TIPS:
- Stock up on frozen veggies when they're on sale. Sauté with a little olive oil and some chopped herbs and you've got a side dish your family will love.
- Canned beans are a great time saver when you need a last minute side dish. Not only are they tasty but they're packed with protein and fiber.
