Lee Poston is a director of conservation and science communications for the World Wildlife Fund, and lives in Washington, DC. He travels the jungles of Africa and would like to expand his cooking knowledge.

He can cook things like rice and pasta, but would like to take advantage of what he finds in his travels.

Emeril's Tips:

  • Traveling to an exotic destination? Bring back ingredients that’ll remind you of your adventures; spices, vacuum-sealed cheeses, and oils are all great bets!
  • If you’re interested in eating vegetarian fare, make sure you’re getting your protein. Good sources of protein include eggs, cheese, quinoa and beans.
