Emeril uses lots of oil varieties (not just olive oil) on the show—which are good to use for which dishes?
Although olive oil is heart healthy and a good oil to use on a regular basis, other oils have different benefits to consider, especially when a health issue is concerned. For instance, walnut oil and grapeseed oil are excellent choices for using in salad dressings and vinaigrettes. They are low in bad fat and their clean flavor makes them good alternatives to olive oil.

Is there gluten free Worcestershire sauce?
Yes! Lea and Perrin is gluten free. Try this gluten free recipe for Chicken Etouffee.

Hi, I've enjoyed many of the Emeril Green episodes so far, and really like the recipe for the cold avocado soup. However, it calls for heavy cream and I can't eat dairy.
Consider replacing the heavy cream with soy milk or soy creamer.

The show uses more oil and less butter than his other shows, but still so much salt!
Salt brings out the flavor of food and in moderation for most people isn't so bad, but if you have a heart condition or salt-restricted diet, clearly you'll want to cut back on salt. To adjust Emeril's recipes for salt (or any recipe really), add spices like cumin, chili powder, Chinese 5 spice or coriander. Add citrus juices and fresh herbs to finish dishes with extra pop and cut back on salt.

What kinds of fish are healthy to eat?
The Omega-3s in fish are healthy for your brain and heart, help ward off cancer, and basically, as we hear all the time now, are just plain great for you. Fish has varying levels of Omega-3s. Check out this guide from the International Food Information Council for info on Omega-3 levels of a variety of fish—salmon and sardines are both great. Of course, fish can also have mercury, and this is something you don't want to eat too much of. It can make you tired, give you headaches and generally have a negative effect on your health. Read the FDA's Mercury Level list to find out about your favorite fish—generally the bigger the fish the more mercury. Your best bet—small fish high in Omega-3s. Learn to love sardines!

My doctor has put me on a "hunter/gatherer" diet. Our menus have gotten boring. Do you have creative ideas?
There are lots of websites devoted to "the paleo diet" such as www.thepaleodiet.com, www.paleodiet.com, www.earth360.com, all of these websites give recipes and information on how to eat and live well on this diet. We also have lots of gluten free recipes from Emeril Green.

I would like to see a show for recipes to help lose weight for people with thyroid problems. I have hypothyroidism and its very hard to find foods to help lose weight.
Emeril Green is a cooking show devoted to teaching people how to create a healthier diet. There are many people who have special dietary needs but unfortunately we are not registered dietitians or doctors and cannot give specific information on specific diseases such as hypothyroidism. I do not think we will be able to do a show that is this specific, but please look through the Emeril Green Recipe Archives for ideas consistent with your dietary needs.

I am a diabetic and I was wondering if Emeril could give me some ideas on converting recepies into good food that is diabetic friendly.
I am sorry to say that there is not a specific conversion table that will automatically tell you how to make recipes diabetes friendly. The culinary team at Homebase relies on cookbooks and websites that are centered around recipes specifically for diabetics. When we do convert recipes we actually remove some of the "bad" ingredients. For example we remove the sugar and substitute with agave syrup or sucanat. There are some really great cookbooks dedicated to diabetic cooking!

I would love to see Emeril do some shows for people who want to eat without all that salt.
Check out these low and no salt recipes from the Spice of Life Episode of Emeril Green. Low sodium cooking is something we will continue to address in future shows, more and more.

What makes a food on the show "green?"
Whenever possible, Chef Emeril uses locally sourced ingredients of all kinds--that would be one factor that determines their "greenness." When local products, in this case products that have traveled less than 150 miles to get to the market or grocery store, are not available, Emeril opts for organic products which have a smaller environmental impact than conventionally grown ones, all things being equal.

What about specific ingredients like leg of lamb? Is that green?
If you aren't comfortable eating young lamb (or other meats) then Emeril wouldn't ask you to even though it is prepared on the show. We want the show to attract a large audience and with every ingredient there are ways of choosing greener versions. Therefore, Emeril uses locally raised lamb on the show that is hormone and pesticide free and raised free range. For some people the only way to be green is to be vegetarian. For others it is to be vegan. For others it is to eat organic and for others it's to eat local. More and more, we seek to address these concerns and distinctions on the show as everyone has more and more food choices to make everyday.

What kinds of fish are sustainably harvested?
The ocean's fish population is in constant flux, so what is a sustainable fish one day (or month or year) will be different then the next day or month or year. To find out what fish you can feel good about eating in your area today, check out the Ocean Conservancy's site or Monterey Bay Aquarium's Seafood Guide.

Why doesn't the show move out of Whole Foods Market and into farms, ranches and other "on-location" destinations where the food actually comes from?
Thank you so much for your suggestion—we couldn't agree more! Now that we've had the fortunate opportunity to meet many of the local farmers, fisherman and ranchers at Whole Foods Market, we plan to expand our shooting into the fields, farms, ranches, bays and oceans to show the various stages of the food cycle in a more hands-on way.
