Tailgating is one of the great American past times, but how do you take a traditional tailgate and make it green? For the past five years, my friend Jared has been coming to the same spot in the stadium parking lot and setting up a feast for the other fans.

What started out as a two-person operation has expanded into a huge tailgating extravaganza! Though Jared has crowned himself the tailgate king, his setup is not exactly eco-friendly. However, with menu help from me and tips from one of our experts, his tailgate will be as green as the playing field!

Emeril's Tailgating Tips:
NOTE: The recipes for the tailgating show are for a small tailgate - 6 to 8 people. If your tailgate is larger, simply multiply to get the yield that accommodates your party.

No waste tailgating means that nothing from your party ends up in a landfill. Create recycling and compost bins for your guests and make sure they are clearly labeled.

If you're tailgate is close to home, why not use dishes, utensils and cups from your kitchen? You won't have to spend the money on these items and better yet, you'll be reusing what you already have. If your tailgate is large or far away from your home-base, invest in compostable items like sugarcane plates or utensils made from potato starch.
