Having a family made up of meat eaters and vegetarians can be complicated, especially at mealtime. Tonight, I'm teaching my friend Melissa that she can please both her non-meat eating daughter, and her meat-eating husband and son, just by cooking up some ingredients she may never have considered before.
We'll dine on spicy Pad Thai, a delicious Tofu with Mushroom Ragu, a savory Breakfast Strata and then sink our teeth into White Bean Veggie Burgers. These meals are sure to please the whole pack!
Emeril's Kitchen Tips: Vegetarian Cooking:
Choose firm or extra firm tofu for stir-fry's and sautes. Soft or silken tofu is suited for pies, dipping sauces or even cookies.
If you're feeding vegetarians and meat eaters during the same meal, try to use hearty ingredients like mushrooms and beans so that everyone will be satisfied.
