Turkish food is one of the most versatile cuisines the world has to offer. It can be adapted with seasonal produce and local ingredients and enjoyed every day!

Handon loves making traditional Turkish dishes but is challenged by keeping them light and healthy. A few simple tips and tricks will teach her how to lower the fat in dishes like Spinach and Kale Borek, Chicken Patties with Cucumber Sauce, Dolmas and Za'atar Spiced Rockfish. And the best part of this menu is that we?re focusing completely on local and seasonal fare.

Emeril's Turkish Cooking Tips:

  • Use an olive oil spray in place of regular olive oil when sauteing at low temperatures.

  • Keep bulk grains like barley, brown rice and quinoa in your pantry. They can be used for quick stuffings, like in these dolmas, or as a side dish.
