For some people, "oven" is a four-letter word. But an oven can be a useful and environmentally friendly way to cook up your meals.

Dawn wants to learn about oven cooking. She usually eats healthy but as her diet has improved, her food has become blander.

Her ideal meal would be an oven cooked, spiced meat dish native to another country. We'll start her off with Oven Roasted Tomatoes for a delicious salad dressing. Then spice it up with Middle-eastern inspired Braised Lamb Shanks with Gremolata, a simple Oven Roasted Green Beans with Pecans, and Baked Polenta will round out the meal.

    Emeri's Oven Tips:
  • Rearrange oven shelves before turning your oven on—and don't peek at food in the oven! Every time you open the oven door, 25°-50°F is lost.

  • Allow only as much preheating time as is necessary, and only preheat when the recipe calls for it. You don't have to pre-heat for broiling.

  • Ceramic, glass and stainless steel cookware conduct and retain heat most efficiently. This means you can lower the oven temperature by 25 degrees when using these.

  • Prepare more than you need and reheat leftovers in the microwave.

  • If you bake a casserole large enough for three meals and skip the oven twice a week, you'll save 229 pounds of carbon during the course of the year.

  • Turn off the heat a few minutes before the food is cooked. It will continue cooking in the residual heat.

  • When cleaning, run the self-cleaning feature immediately after using the oven to take advantage of residual heat.
