Trying to get kids to eat interesting dishes isn?t always easy, and knowing the right portions to serve can get confusing. How much protein do they need? What about fiber? Tonight I?m making a meal that is not only going to challenge their palates, but also teach parents how much is enough.

My friend Deborah needs a hand getting her kids to try culturally diverse dishes so together, we?re making Shrimp and Veggie Summer Rolls, Vietnamese Chicken Soup and Peanut Satays. This meal will not only excite her palate, but inspire her kids to sample what?s new and "unusual."

Emeril's Kitchen Tips:

Involve your kids in the kitchen! Asking them to help plan and prepare your dinners will not only broaden their palates but their appreciation for a home-cooked meal as well.

Remember to fill up with fiber! Make an effort to eat fiber rich foods like whole grains and veggies which will leave you feeling full longer.
