She likes salad, he likes steak. How do you take two different tastes and make one healthy menu? Cindy is a holistic health counselor who loves healthy, seasonal eating, but her fiancé is a hamburger and pizza kind of guy. They're going to share their life together...but how about sharing dinner?!

Emeril will help them with a meat and potatoes makeover whipping up recipes like a healthy Florentine Style Buffalo Steak Salad. You won't miss the meat in the Spinach and Mushroom Lasagna and Three Bean Chili. And you won't leave hungry once you've had Emeril's Hearty Green Enchiladas.

Take a day or two off from meat. Consider Meat-free Monday:

  1. Cutting down on meat cuts down on pollution: The world's livestock is responsible for 18 percent of greenhouse gas emissions.

  2. Cutting down on meat is healthier: Only 27 percent of Americans eat vegetables three or more times per day.

  3. Cutting down on meat is economical: Replacing meat, chicken and fish with vegetables and fruits is estimated to cut food bills by an average of $4,000 a year.
