More and more people in the United States are developing type 2 diabetes but there is good news. Some folks can control their diabetes just by changing their diet and eating fresh foods, high in vitamins and low in sugar.
Today, I'm cooking with a friend who really has to watch what he eats and so together, we're making a healthy and satisfying dinner. Today we're going to meet Paul, an active guy who was just diagnosed with type 2 diabetes. He doesn't know much about grocery shopping or cooking, but he's eager to learn.
TIPS:
- Agave nectar is diabetic and vegan friendly. It's low on the glycemic index and adds a tasty natural sweetness to dishes.
- These salmon fajitas would be delicious and just as healthy with other lean proteins like chicken breast or tilapia.
