Emeril Green Episode: Garlic Free and Great

Garlic is one of my absolute favorite ingredients to cook with, but is it possible to achieve a mouth-watering meal without it? I've got a friend whose boyfriend is allergic to the good stuff so we're coming up with a few flavorful alternatives to spice things up. Today we're going to meet Galia, a lady who loves to cook but can't use garlic in any of her dishes because her boyfriend is allergic. We'll make a mouth-watering Mango Lassi, my version of Roghan Josh, Cucumber Raita and delicious Naan.

TIPS:

  • Make your own curry blend from the bulk spice aisle; keep in an airtight jar for up to one year!

  • Good substitutes for garlic are shallots and onions.
