Tofu... It is versatile, highly nutritious, and takes on any flavor used to prepare it. But, if you have no clue how to use it, then Chef Emeril has some great ideas for you.
Corinne wants to include more tofu in her meals but doesn't know how to prepare it or what to look for when she buys it. First, we'll learn how to make Homemade Tofu. We'll use that in a Green Salad With A Green Goddess Tofu Dressing. A surprising way to use tofu is in Tofu Parmesan, as well as a classic Korean Barbecue Tofu. And don't forget dessert—delicious Orange Crepes.
Emeril's Tips:
Tofu Storage
- When you get your tofu home, rinse it and then store it in the refrigerator in fresh cold water.
- Make sure you use the tofu within three or four days.
- Changing the water daily will help keep the tofu fresh for up to one week.
Okara
- This is the fibrous stuff left over from making soymilk.
- May be even more nutritious than the soymilk itself.
- Very high fiber and full of protein.
- At the very least, it makes a terrific addition to your compost pile.
- You can keep fresh soymilk for up to 3 days in the refrigerator, but you shouldn't try to keep it too long. Remember this is totally preservative-free.
