Chicken nuggets and frozen dinners can be quick fixes for busy moms who need meals on the go, but they're not the healthiest options. In fact, you can turn one meal into many with some careful planning, smart shopping and creative cooking.

Today we're going to meet Raquel Riley Thomas, a busy mom and professional photographer whose family meals turn out less than picture perfect. Chef Emeril is going to change the way Raquel plans, shops, and cooks her meals and she'll never approach meal planning the same way.

TIPS:

  • Reduce your carbon footprint! Plan your meals for the week before you go to the grocery store and avoid needless trips back and forth.

  • Make sure to purchase hormone and antibiotic free meats from your grocery store or farmer's market. Not only are they gentler on the environment but they're also better for your body.
