
Prisons are not known for their culinary delights, but the lack of nutritionally-balanced meals for prisoners may actually be contributing to the cycle of violence that our country's prison system has not been all that successful in breaking.

More and more prisons are recognizing the value that cultivating a garden can bring to people living an environment not rich in opportunities for nurturing or for healthy food. It may have all started with Nelson Mandela when he was in prison, and programs now exist around the world.

The Horticultural Society of New York runs a horticulture and nursery operation on Rikers Island to give basic work skills training to inmates--and help for ex-inmates to reintegrate into (a green) society.
