After opening the first Conviction Restaurant in Toronto, world-renowned chef Marc Thuet, and his wife Biana Zorich are doing it all over again in Vancouver. But with just two weeks until opening night, they still have to train 12 ex-cons and find a venue. Also in this episode... It’s not just Marc and Biana’s necks on the line when a surprise trip to a slaughterhouse has dramatic consequences for two trainees; a kitchen challenge sends one recruit to the hospital; everyone is on edge for a trial service with real guests; and, with trainees walking out the door, the team keeps getting smaller.

The restaurant is opening in just four days, and things don’t look good... The power struggle between Biana and owner Daniel gets worse when the restaurant makeover hits a snag; a new trainee arrives in the kitchen while another goes AWOL after a night on the town; the front of house trainees struggle through a serving challenge at the city’s busiest patio; and, with mere hours to go, the dining room is still a mess, the food still hasn’t been prepped, the kitchen staff is short, and there aren’t even enough plates in the kitchen!

The restaurant has just opened and it’s already in trouble. In the kitchen, Marc takes Brent to task and Tommy’s temper puts everyone on edge; on Biana’s front of house team, one trainee is suffering from drug withdrawal, another ends up in jail while a third trainee’s backtalk gets him fired; someone is stealing from the locker room; Biana and Marc celebrate Cassandra’s wedding dinner with an inspired vegan feast; and, just as Justin is overcoming the stress of serving a renowned food critic, Biana notices there’s a second critic in the dining room!

With an important VIP lunch on the horizon, the understaffed restaurant struggles with personality conflicts, no-show trainees, a party vibe behind the bar, and a leak in the kitchen that threatens to bring down the ceiling. Also in this episode... Marc risks a fishing expedition with his boat, bartending proves too much for one rehab-ready trainee, and Marc literally goes through the roof!

After cleaning up the flooded kitchen, Conviction is back in business. But when Marc and Biana leave the trainees in charge for the first time ever, the under-staffed restaurant ends up struggling with a crowd of late-night diners. Also in this episode... After appointing his second-in-command, Marc has to choose who to fire and who to hire; Biana comes up with a risky scheme to drum up business and then busts one trainee at the supermarket; and, there’s a heartbreaking reunion when the team hands out meals to the homeless.

Marc and Biana leave the trainees in charge of the restaurant on a very busy night with chaotic results! An angry trainee barges in during dinner; after two hits to the head, Cassandra’s doctor tells her to take a week off; a kitchen rookie has Marc impressed from the start; a martini promotion backfires at the bar; and, just as he’s celebrating a critical milestone, a few minor mistakes have Biana’s star employee heading out the door.

With just a few days to go until the end of the project, Marc and Biana plan a special dinner service for the trainees’ friends and family. After returning with renewed determination to beat his addiction, Justin disappears again; Etarre is suddenly homeless and has trouble focusing on work; Biana enters Conviction in the gay pride parade; Danielle serves a table of picky partiers who don’t want to pay for their food; and, with too few bowls, overcooked salmon, and an oven breakdown, Marc is furious when the kitchen is inundated with complaints.

Premiering Friday, March 4 at 10 pm
It’s the last week of the project, and Biana and Marc are planning a celebrity-studded graduation party. Also in this episode... A major argument erupts when Cassandra orders the Front of House staff to clean up; Zoran comes to the rescue when a mechanical failure shuts down the kitchen; Danielle discovers she is pregnant and will be forced to choose between methadone and her baby; there are tears all around as Biana and Marc finally say goodbye to the trainees; and, Justin heads off to rehab.

World-renowned Chef Marc Thuet and his wife Biana Zorich meet their motley crew of 24 ex-convicts and waste no time in putting them to the test. The first day of training sees tempers flare as death threats are made and two trainees walk away from the project. With only three weeks until opening night and no venue, the training is cutthroat as the couple tries to decide who will make the final 12.

Before they choose their final 12, Marc and Biana leave the group in charge of their restaurant for the night. And, with lost checks, personality conflicts, sudden food substitutions, and delayed service, the experiment proves to be a disaster. Frustrated, Marc and Biana have to decide who will make the final cut.

With five days until the grand opening and while the kitchen, dining room, and even the participants get a makeover, money is stolen from the storeroom and after-hours partying becomes a problem. With little time to go until opening, the new $80,000 stove and pizza oven still haven't been delivered... Can they pull through as a team to make it all work?

After opening weekend, the trainees' real work begins...Marc tries to teach discipline in the kitchen and unveils new uniforms and knives for his team, the search is on to find the in-house thief, Marc puts Scott in charge of the kitchen for an evening, and one of North America's most influential food writers comes in for a meal.

Tardiness and absenteeism are at an all time high in the restaurant. Rumors are swirling that someone will be cut from the team. Marc serves up pan-fried lamb's testicles, and Jason J. collapses in the kitchen. When former trainee Kyle is reinstated, revenge is served up in the toilet.

Although all should be running smoothly by now, things are still bumpy. Marc tries to boost his trainees' lackluster performance with a challenge. When Roti ties the knot, Biana and Marc host his reception at the restaurant.

Biana and Marc are feeling the pressure when Jason J. gets into trouble. Jen faces a dilemma, disaster-magnet Jamie pushes his bosses to the limit, but a helicopter ride lifts the trainees' spirits.

It's the end of the summertime rush, and the last week of the trainees' three-month probation. Although Marc and Biana are planning a star-studded graduation party, will there be any trainees left to celebrate?
