Ready, Set, Green Week Two: Eating My Way Green

By Team Planet Green IN Food & Health Jun 23 2008

Of all the ways to go green, I'm the most excited about changing how we eat. I love cooking and baking, and have already been trying to make more meals from scratch to avoid preservatives and all those add-ins with names we can't pronounce. So I spend the whole week looking forward to my first farmer's market trip, envisioning piles of locally grown zucchini, tomatoes, carrots, fresh herbs, peaches, strawberries, and blueberries. I even collect recipes perfect for fresh summer produce, including one for a strawberry cream pie. I can't wait. + READ MORE

And as we're cooking a meat-less, but delicious and protein packed lunch (see Kirsten's 15 minute lunch recipe below), she introduced me to the concept of "food miles"?or the amount of miles and energy it takes from pitchfork to dinner fork. + READ MORE

On his birthday, Ed tries his hand at baking vegan tofu brownies. You don't have to be on a vegan diet to enjoy, and reap the benefits of, dessert recipes made with wholesome ingredients such as tofu, black beans, or pumpkin. Just think of it as multitasking: why not get a little bang for your nutrition buck while you're indulging in a decadent sweet? If you are baking for kids or anyone else who might be reluctant to eat healthy foods, these brownie recipes are a great way to sneak in that extra nutrition. + READ MORE

Asparagus Soup

Soup of the Week: Asparagus

By Kelly Rossiter IN Food & Health Jun 6 2008

I was happy to find a straight forward recipe for asparagus soup, other than the chevre filled squash blossoms in tempura batter that you are supposed to whip up and put on top. The chef goes into great detail about how you build up a platform in the bottom of the soup bowl so that your squash blossom doesn't fall into the soup. There you go, scaffolding in the soup. You might well be wondering how I got the sour cream and chives to sit on top of the soup rather than sinking to the bottom in my photo. It's a secret, but be careful where you place your spoon. + READ MORE
