Leisurely Vacation Breakfast

Toad in a Hole with bread from a local bakery, some organic bacon and organic eggs!

One of the great joys of being on vacation is getting to sleep in. Another great joy is actually having the time and energy to make a real breakfast for yourself and your family. No rushing out the door with a half slice of toast in your hand, or worse still heading off for a massively expensive cup of coffee and a calorie laden muffin or Danish pastry.

My husband has a breakfast that he makes for himself only at the cottage. He's always called it Toad in the Hole, but that is actually a traditional English dish of sausages cooked in Yorkshire pudding batter. It's really called Egg in a Basket, and it is one of his favorite things to eat. We buy bread from our local bakery, because I don't have an oven at the cottage, then he adds some organic bacon and organic eggs. Add some shade grown, free trade Kicking Horse coffee and you have a great green breakfast.

After cooking the bacon he pours off any excess fat, although organic meat is very lean and there is often just enough in the pan to cook the egg. He cuts a hole in the centre of a slice of bread, making the hole slightly larger than the egg yolk. Place the bread in the pan, and then crack the egg into the hole in the bread. Once the egg is firm on the underside, you turn it just once, cook it to your liking and then serve with the bacon.
