Like most paper products, regular cupcake and muffin liners are bleached with chlorine or chlorine products to make the paper fibers look white and brighter, a process that also unleashes toxic carcinogens, such as dioxins, that contaminate our water, soil, and food supply.

The next time you're in the baking aisle, consider reaching for unbleached baking cups, instead, such as If You Care's greaseproof liners. Or try going commando once in a while-this writer's preferred baking method-after greasing the pan with oil or butter. Tip: Cast iron is naturally non-stick (with the proper seasoning), durable, heat-retentive, and lasts a lifetime.
