Eat Raw, Go Green: Make These Curried Potato Chips

It's a labor of love for raw food enthusiasts and their inventive raw recipes.

So what's the raw food diet really about anyway? Today, it's much more than just cut up fruits and vegetables. A raw food diet consists of sprouted grains, legumes, seeds, nuts, and of course, fruits, and vegetables. All of the fruits and vegetables must be served raw or dehydrated. None of the seeds, nuts, or sprouted grains can be heated either. While it does vary amongst raw foodies, no foods should be heated above around 118 degrees. While it's more than a diet, you are sure to lose a bunch of weight eliminating processed foods entirely.

Why Raw=Green

According to raw food guru Ani Phyo, one of the major changes she noticed was how her kitchen garbage disappeared when she began eating only fresh whole foods. She was no longer buying nor disposing of processed food packaging and all the plastics and cardboards. She can make a meal for 300 hundred people and at the end of it will be left with organic compost. The compost is fed to worms who then create fertile soil for her organic garden. So it's super green too!

But what about all that junk food that you just can't live without?

Well, maybe you don't have to. Try these curried raw potato chips:

Raw Curried Potato Chips

8 large potatoes, try Yukon Gold
1 tbsp curry powder
1 tsp salt
½ tsp freshly cracked pepper
½ tsp cumin
the juice of one organic lemon

Method

  1. Slice the potatoes as thin as possible (paper thin). I would carefully use a mandolin here.
  2. Dip in a bowl of fresh lemon juice to stop discoloration. Dry them off and add spices.
  3. Layer in the dehydrator and spray lightly with a natural pan spray.
  4. Dehydrate for several hours at 110 degrees or until crispy. Check frequently as the thinner potatoes will dry quicker than thicker slices.
  5. Cool well and bag in an airtight container.
