Fall is a great time to turn on the oven and get to cooking all the leftover summer and fresh autumn vegetables. Especially if you've been growing your own!

The folks at Beekman Farm know how to cook up a storm, and they're happy to share some of the creative and delicious recipes they've come up with. Their full list of recipes is worth checking out; these five are just a sneak preview, but they're just perfect for fall.

So get cooking!

1. Onion tart: if you've never thought of combining savory caramelized onions with tangy bleu cheese and sweet, juicy slices of apple, this is a great time to give it a try.

2. Braised cucumbers: cucumbers, leeks, and dill. What more flavor could you ask for?

3. Broccoli soup: with garlic, rosemary, and yogurt—and minus the cream—it's much healthier than cream of broccoli, and tastier too!

4. Roasted beet salad: transform the ultimate fall vegetable into the ultimate fall salad.

5. Tomatillo salsa verde: serve with chips, of course, but give it a try also as a garnish for a Mexican-themed main dish, or even with a cheese plate or bruschetta.
