Use the Whole Peach: Make Peach Leaf Cordial

No part of the peach goes wasted with this simple homemade summer spritzer.

Here's a rustic cordial made with peach leaves that lend their almost flowery, almond taste. Don't bother with an expensive bottle of wine, just pick out a bargain bottle of whatever color you prefer, heat it with the other ingredients, and wait a while. David Lebovitz includes Cognac in his recipe which is traditional, but if you don't have it lying around it's just as nice without. You can keep it in the fridge for about 6 months, although there's no way it'll last that long.

Peach Leaf Cordial

A bunch of peach leaves (30-40 leaves), gently washed
1/2 cup sugar
1 bottle red, white, or rose wine
zest of 1 lemon

  1. Put all the ingredients in a large pot and heat until the sugar dissolves.

  2. Cool at room temp then transfer to a lidded container in the fridge for about 2 weeks.

  3. Strain the cordial into a clean wine bottle and serve on ice in the dreadful gap between tea time and dinner.

  4. Use the rest of the peaches you bought to make Emeril's Peaches And Cream Bread Pudding.
