How could we possibly have an Oscar-themed food party without including the delightful meat pies of Sweeney Todd: The Demon Barber of Fleet Street? It's my mother's birthday today and I offered to make my test meat pies for her birthday luncheon. For some reason, she politely declined.
As I mentioned in my first post of this series, I thought Josh Brolin should have received the nomination for Best Actor, rather than Depp. I liked the movie well enough, but Depp seemed pretty mediocre to me. I don't think he gave the same calibre of performance as Brolin. I also would have been thrilled to see Gordon Pinsent get a nomination for his beautiful, heartbreaking performance in Away from Her.I actually had some some beef braised in red wine left over from a dinner party my son held this week, so I just used it. Cheating, I know. We used brisket and it was browned on top of the stove and then braised in red wine and beef stock and cooked for about 3 1/2 hours at 350°F. For the pie, I sautéed some onions until they were soft then added sliced button mushrooms and some parboiled carrots. I tossed the meat and gravy in with the vegetables, and then covered it with a crust and baked it for about 30 minutes.
For the crust put 1 1/4 cups of all purpose flour into a food processor. Add 1/4 pound cold, unsalted butter. Process until it has a coarse crumble. Add a few drops of ice water and process again for a few seconds. When the dough stays together when you squeeze it in your hand, turn it out onto a lightly floured work surface and roll it out. Place it over top of the meat mixture in your casserole dish and put a few vent holes in it with a fork. Brush the dough with a bit of egg mixed with milk or water.
Then try not to think about the movie while you eat it.
