Whether I'm skiing down the slopes or hanging out in my pjs in front of the fire, in the winter my body craves warmth. When winter sets in and you're doing your best to stay toasty, nothing beats satisfying teas, tasty coffee drinks, or high quality organic red wine. This year why not recreate some old favorites with a greener take on these delicious coffee recipes?

Use organic, local dairy products and you can also make it healthier by making your own fresh, organic whipped cream (recipe below).

A Greener Irish Coffee
12 oz French pressed organic coffee
4 oz high quality bourbon
1 tbsp organic brown sugar
¼ cup homemade whipped cream (recipe to follow)
Top with a sprinkle of raw sugar and organic cocoa powder

Method for Irish Coffee:

  1. Mix coffee, brown sugar, and bourbon.
  2. Top with whipped cream, raw sugar, and cocoa powder.
  3. Serve in a mug.

Homemade Whipped Cream
½ cup organic heavy cream
1 tbsp raw sugar

Method for Whipped Cream:

  1. Mix sugar with heavy cream.
  2. Whip with an electric mixer until it holds its form and makes ridges. Don't go beyond that or it will turn into butter.

Yield: Makes 2 drinks.

Or try this fabulous nonalcoholic treat:

A Greener Gingerbread Latte
1 cup 2 percent milk from a local organic dairy, 6 to 8 ounces per person
1 tbsp of gingerbread syrup
1 to 2 shots organic espresso
¼ cup homemade whipped cream (See recipe above).
Top with crushed organic gingerbread cookies

Method for Latte:

  1. Bring the milk just to the simmering point. Add espresso.
  2. Add the syrup and take off the heat, whisk until foamy.
  3. Pour into cups and garnish with the whipped cream and cookie crumbs.

Yield: Makes 1 drink.
