Feed 8 For Under $100 With This Green Frugal Feast: Father's Day Brunch

There's no need to take dad out to an impersonal dinner when you can make a super special meal at home.

With Father's Day right around the corner, it's the perfect time to get everyone together to celebrate your fabulous dad. If your immediate reaction was "oh shi*t!" I forgot, there's no need to fret because you still have plenty of time to throw this little party together. The best part—the party costs under $100. All that your dad really wants is to spend time with the family, so why book a reservation at a packed restaurant, when you can actually enjoy each other at home? Brunches on Father's Day are always so impersonal because that's a day when everyone decides to go out. Further, your conversation can get drowned out by the crowds.


Trout with Eggs


Make my delicious trout and eggs. The trout is local and so are the eggs. So I don't feel quite so guilty about the meal. And once you break into the yolk of the egg and let it run over into the trout, you'll simply melt.

Buttermilk Biscuits


Sup up the egg with Kelly Rossiter's ridiculously delicious buttermilk biscuits with green onions, black pepper and sea salt. Kelly recommends using regular, unbleached flour and adding a teaspoon of baking powder instead of self rising flour. These are great because they won't overpower the trout and the sea salt is the perfect match for the eggs.

Wine Glazed Summer Fruit


For a light but deliciously sweet dessert try Emeril's Wine Glazed Summer Fruit. It's made with delicious plums, peaches, and apricots soaked in yummy Chianti. Because the main course is so filling you'll just adore this classy but not-too-heavy dessert.
