I love figs and they just scream autumn to me. That deep earthy sweetness is a great addition to so many meals. Making your own jam not only cuts down on packaging, it cuts way back on cost. High quality jams are pretty pricey. Making your own jam makes it easy to control the high sugar content which tends to mask the flavor of the fruit. Hit the farmers' market to pick up your figs and you can throw this recipe together in five minutes flat.

Fresh Local Fig Jam

Ingredients:
1 pint local organic figs, chopped roughly
¼ cup sugar
The juice of 1 organic lemon

Directions:

  1. Heat a saute pan over low heat and add the sugar.

  2. Top with the lemon juice and slowly stir it as it turns into a syrup.

  3. Add figs and slow cook over low heat until all the ingredients combine. Let it cook for about 10 minutes.

Serves 4

Serve fig jam atop a local soft cheese or with your favorite pork tenderloin. You can even layer it on top of a fresh bagel with cream cheese. Just a reminder that this is a bit more tart than your processed jellies because of the lack of sugar content.
