On a summer day, kids are craving something cool and sweet. But sometimes we moms are at a loss for anything but a frozen fruit juice Popsicle--and we all know that kids get bored with the same old, same old.

Here's a great vegan option that's filled with fruit energy. The recipe comes from the queen of raw food, Cathy Silvers.

Vegan Fruit Smoothie

1 orange
1 apple
1 banana
1 cup ice
1 tsp coconut flakes (optional)
agave, to taste (optional)

To make:

In a blender, place orange, banana, apple, and two cups of water with one cup of ice. If you want to sweeten further, add one tablespoon of agave. Some kids like coconut; some don't, but if it's a pleaser for the kids your whipping up snacks for, you can also add a tablespoon of coconut flakes. (It's really easy on your food budget, too!)

This makes 3-4 servings for busy, overheated, hungry kids--and it stays with them for a lot longer than the average "energy" drink.

You can find more of Cathy's healthy recipes in her book, Happy Days, Healthy Living. And Cathy knows about Happy Days--she was a star on Gary Marshal's classic show Happy Days, so her book is all about raw conversion mixed with fascinating Hollywood factoids. (Ever wondered what the Fonz is really like? Or if Richie Cunningham really is nice? Find out here!) Plus, Cathy's dad was TV pioneer Phil Silvers, of fame Sargent Bilko. See? Green really is our new American heritage...

Welcome to summer. I've got more meatless treats coming soon! Viva la veggie!
