Yield: 4 to 6 servings
Ingredients:
1/4 cup olive oil
1 yellow squash, chopped
1 zucchini, chopped
1 medium sized eggplant, chopped
1/4 cup chopped basil
1 large yellow or red tomato, chopped or sliced
Salt and freshly ground black pepper to taste
Method:
In a large sauté pan over high heat, add the olive oil. After a minute or so, add the yellow squash, zucchini, eggplant, basil and tomato. Season with salt and pepper and cover. Allow to cook for 10 minutes or until the vegetables are tender. Serve immediately.
