Emeril's Wild Boar Chops and Sausages with Peppers and Onions

Ingredients:
¼ cup olive oil
6 to 8 3-ounce wild boar chops
2 pounds assorted wild game sausages, cut into 1 ½" pieces
2 green bell peppers, sliced
1 red onion, sliced
Salt and Freshly Ground Pepper

Method:
Preheat the oven to 425. Place a large cast iron pan or grill pan in the oven while you prepare the chops.

Evenly drizzle chops, sausages, peppers and onion with olive oil and salt and pepper. Remove the pan from the oven and arrange the chops, sausages and peppers on the pan, being careful not to burn yourself. Place the pan back into the oven and cook for 12 minutes or until the sausages reach an internal temperature of 165 degrees.

Serve immediately.

Yield: 6 servings
