Emeril's Watermelon, White Peach and Kiwi Salsa

Yield: About 4 cups

Ingredients:
2 cups seeded and small diced watermelon
2 white peaches or nectarines, pitted and cut into small dice
1 kiwi, peeled and cut into small dice
1⁄4 cup minced red onion
2 green Thai chiles, stemmed, seeded, and minced
1 red Thai chile, stemmed, seeded and minced
1⁄4 plus 1/8 teaspoon salt, or to taste
7 tablespoons lime juice
2 tablespoons chiffonade of fresh mint

Method:
In a non-reactive mixing bowl, combine the watermelon, peaches, kiwi, red onion, chiles, salt and lime juice and toss gently to combine. Add the fresh mint and fold gently. Allow to sit for 30 minutes and up to 2 hours before serving.
