Emeril's Vanilla-Scented Fruit Salad

Yield: 1 cup syrup, 11 cups fruit salad

Ingredients:
1 cup agave nectar
1 vanilla bean, split and scraped
Juice and zest of 1 lemon
2 cups diced cantaloupe
1 1/2 cups diced pineapple
1 1/2 cups sliced strawberries
1 container (6 oz.) raspberries
1 container (5.6 oz.) blackberries
2 peaches, cored and diced
1 cup blueberries
1 cup red grapes
1/4 cup mint leaves

Method:
In a small saucepan over low heat, heat agave nectar and vanilla bean very slowly until hot and vanilla is aromatic. Cool completely, then remove vanilla bean and stir in lemon juice and zest.

In a large bowl, combine all the fruit. Chiffonade mint leaves and add to fruit along with 1/2 cup agave syrup. Stir to combine, cover and refrigerate for at least 1 hour before serving.
