Ingredients:
1 shallot, finely chopped
2 tablespoons balsamic vinegar
1 cup olive oil
1 tablespoon Dijon mustard
2 heads lettuce, Butter, Bibb or Red Oak, cleaned and leaves picked
2 large tomatoes, roughly chopped
1 bunch radishes, cleaned and chopped
1 small red onion or 2 scallions, chopped
2 tablespoons cilantro leaves
Method:
In a large bowl, add shallot, balsamic vinegar and whisk together with olive oil. Add mustard and continue to whisky to combine. Add lettuce, tomatoes, radishes, onions and cilantro and gently toss. Serve immediately.
