Emeril's Roasted Baby Beets

6 to 8 (1 1/2-inch) baby beets, peeled and stems trimmed
2 tablespoons olive oil
Salt and pepper

Preheat oven to 400 degrees F.

Place the beets in a small bowl and drizzle with the olive oil. Season the beets with a pinch of salt and a pinch of pepper. Place on an oven-proof platter and roast in the oven until tender, about 30 to 40 minutes. Remove from the oven and allow to cool. Once cool enough to handle, slice into quarters and set aside
