Yield: 4 servings

Ingredients:
1 (1 1/4 pound) flank steak
Creole seasoning
1/4 cup olive oil
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Method:
Season the flank steak with the Creole seasoning on both sides. Place in a gallon sized sealable plastic bag, along with the olive oil and Worcestershire sauce. Marinate for at least 4 hours, preferably overnight.

Preheat the broiler or grill to medium-high. Season the steak on both sides with kosher salt and pepper. Broil or grill the steak on both sides for 6 minutes. Remove and allow to rest for 10 minutes.

Thinly slice steak against the grain and fan out on a serving platter. Serve immediately.

Editor's Note: Look for grass-fed beef wherever possible.
