Emeril's Amaranth With Basil and Olive Oil (Video)

Yield: 2 cups

Ingredients:
1 Cup Amaranth
1 cup water
2 tablespoons olive oil
2 tablespoon basil, chopped
Salt and pepper to taste

Method:
Simmer amaranth in water for 12-15 minutes. Remove from heat and add olive oil, basil and salt and pepper.

Serve warm or at room temperature.
