Caviar has long been a mainstay of the rich and famous. But while serving caviar at a dinner party used to scream super chic, today it's simply an eco no-no.

Overfishing has caused traditional caviar to almost disappear from store shelves. In fact, the United States has banned the import of beluga caviar to protect Caspian Sea Sturgeon because over fishing has pushed sturgeon close to extinction.   • According to the Monterey Bay Aquarium Seafood Guide, your best choice for caviar is produced by U.S. farmed white sturgeon and paddlefish.
